Waterfall Wednesday: IOU, Please Enjoy this Recipe for Marshmallow Fudge Brownies ;)

 Sometimes adventurers get sick. . .

 

This past weekend I was all set to explore Greeter Falls. I had my cooler set, my swimsuit ready, my beach towel folded by the door, and the farthest back row of seats in my car flipped up so I could cram as many friends in my car as possible. I had my check list (tennis shoes, sunblock, sunglasses, water bottle) and my snacks (cucumbers, carrots, apples, peanut butter, Cheez-Its). The weather was forecasted to be perfect with sunshine and temps in the mid 80s. I scrolled Instagram posts of Greeter Falls, mapped the route to get there, and questioned anyone I came across who had been there ("How's the hike?" "CAN YOU SWIM?" "Can you cliff jump?" ).  I planned to write of my latest adventure for the final post of August's Waterfall Wednesday. However, I came down with a really, really, bad cold. Hours before we were set to leave, I realized my body was not going to be able to make this adventure, no matter how much my heart wanted to. (PS the answers to those questions I asked: "Great!" "Yes!" and "Yes!" -- see why I wanted to go?)

 

 

Eventually I will make it to Greeter Falls, but until then I thought I'd make up for my shortcoming Waterfall Wednesday with a sweet little recipe. Consider this an "I'm sorry" gift from me to you. This recipe is one I came up with the summer before my senior year of college and it was a frequent request for late night study sessions and movie nights. It has been a bit tweaked over time. This is the most current version of my Marshmallow Fudge Brownies: 

 

2/3 cup Butter

4 tbs. Cocoa Powder 

1 3/4 cups Sugar

2 tsp. Vanilla 

3 Eggs

1 cup Flour

1 bag of Mini Marshmallows

Hershey's "Perfectly Chocolate" Chocolate Frosting

 

Directions:

Combine butter, cocoa, sugar, vanilla, eggs, and flour all at once, beating until just thoroughly mixed. (Hint: they come out better when the batter isn't over beaten.)

 

Bake at 350 degrees for about 17 minutes or until they look almost done (if you insert a knife in the center, it should come out almost clean). Remove from oven and top with enough marshmallows to completely cover the brownies. Bake for another 3-5 minutes, or until the marshmallows have melted together and are just about to turn golden brown. 

 

Remove brownies from oven and top with Hershey's "Perfectly Chocolate" Chocolate Frosting while still warm, so the frosting melts over the marshmallows. 

 

That's it! It's not too difficult and always a hit! Technically, there's not actually fudge in the recipe, but when it all melts together, the frosting sure tastes like it! So there you have it, from my kitchen to yours, Marshmallow Fudge Brownies!
