Waffles

I grew up on boxed waffle mix waffles. Which were great, but once I came up with this easy recipe, I never went back! These are seriously the best and ridiculously easy, and the recipe is just the same if you'd rather make pancakes. (No more pantries full of pancake and waffle mixes! They're basically the same thing people!)

INGREDIENTS:

2 cups Flour

1 tsp Salt

1 tbs Baking powder

2 cups Milk

1/2 cup Vegetable oil

2 Eggs

DIRECTIONS:

All I do is throw all of these ingredients in a bowl and whisk them together with a fork until throughly mixed, but still slightly lumpy. (Hint: Add them in this order, when you add the oil before the milk, sometimes it mixes funny with the flour and things get really lumpy.)

Heat your waffle iron (I put mine on the hottest setting), pour the batter in, and wait for fluffy goodness!

Variations:

Blueberry Waffles - add your desired amount of fresh blueberries to the batter.

Peanutbutter, Banana, Chocolate Chip Pancakes - add sliced bananas and chocolate chips to the batter and top with peanut butter instead of syrup! Just use a griddle heated to 375 degrees instead of the waffle iron. (Secret: Only flip your pancakes once and NEVER pat them down. This keeps them fluffy and delicious! Picked this tip up from Nashville's Pancake Pantry's sage advice "Never pat a pancake!" It's a cooking tip too good to be kept secret and it makes a difference.)

Brown Sugar Cinnamon, Peanut Butter, and Banana Waffle Breakfast Sandwiches - make plain waffles and stack two together with Nut Butter Nation's (A Nashville favorite and literally the best peanut butter you'll ever eat) Brown Sugar Cinnamon Peanut Butter and sliced bananas in between.

Feel Free to play with the recipe and make it your own! Cut back on the flour and add oatmeal. Mash bananas instead of slicing them. Top with strawberries, whipped cream, and/or honey! You really cannot go wrong!
