I'm in Love With a Monster (Cookie)!
It's been a crazy couple of months, but I've finally go a second to share this one! For Valentine's day I baked an excessive amount of red, pink, and chocolate treats (feeding others is my love language)! I came up with this recipe for Monster cookies when I originally set out to make a batch of chocolate chip and M&M cookie bars and realized halfway in that I did not have all the ingredients (like enough flour) that I needed. So I adapted an oatmeal cookie recipe I had and whipped up a batch of these. I've made them several times since and they've been a big hit. They have peanut butter in them, which I think almost makes them a protein bar and therefore they should count as breakfast! Actually, I ate these for breakfast last week!
INGREDIENTS:
2/3 cup Granulated sugar
2/3 cup Brown sugar (packed––like you're making a sandcastle)
1 tsp Baking soda
1/2 tsp Baking powder
1/2 tsp Salt
1/2 cup Butter (softened) (I use Land O Lakes Salted Butter)
1/2 cup Peanut butter (I use creamy, but you could experiment with chunky)
1 tsp Vanilla
2 Eggs
3 cups Oatmeal (I use Quaker Old Fashion Oats)
1 cup Flour
3/4 cup Chocolate chips
3/4 cup M&Ms (I actually used vintage teacups to measure out the chocolate chips and M&Ms, but it should be about 3/4 cup each)
INSTRUCTIONS:
Combine all ingredients except for the oatmeal, flour, chocolate chips, and M&Ms in a mixer and mix on a medium speed until thoroughly combined. Add in oatmeal and flour, continuing to mix on medium speed. Stir in chocolate chips and M&Ms. Roll into 2-inch balls and place on an ungreased cookie sheet. Bake at 375 degrees Fahrenheit for approximately 10 minutes. Cookies should be lightly brown and soft (and delicious)!
